Nutritional values in a cup of pumpkin include protein, carbohydrates, vitamin A, fiber, vitamin C, iron, vitamin E, vitamin B2, manganese, potassium, and copper. It also contains small amounts of some B vitamins, folate, zinc, phosphorus, and magnesium. Almost 95 percent of pumpkin is water. Thus, it is very low in calories.
