Amines
Amines are released by bacteria during the storage and fermentation of foods. There are different forms, but histamine is mostly linked to food-related intolerances. This substance is necessary for the nervous, digestive, and immune systems. In some people, their body can metabolize and excrete histamine easily. But when some problems occur, histamine can build up and lead to intolerance. Common symptoms include hives, headaches, skin flushing, anxiety, itching, diarrhea, stomach cramps, and low blood pressure. If you have histamine intolerance, make sure to avoid dried fruits, cured meats, fermented foods, citrus fruits, aged cheeses, avocados, smoked fish, and vinegar.[6]
