Buckwheat

Buckwheat is a pseudocereal, meaning it can be prepared and consumed like a grain. In spite of its name, this food contains no gluten and is not in the same family as wheat. Raw versions contain more than 70 percent of carbohydrates, while cooked versions contain around 20 percent of carbohydrates. Buckwheat is a very nutritious food as it provides both fiber and protein. Compared to other grains, it also contains more antioxidants and minerals.
