Potatoes contain a lot of potassium, which may be a problem for those with kidney disease, particularly people in late stages. On average, a medium baked potato provides up to 610 milligrams of potassium. If you consume too much potassium, the kidney is unable to get rid of the extra amount. As a result, this mineral may stay in the blood and lead to some health issues. If you eat potatoes, consider leaching or soaking them to lower the potassium levels.
