Kale
Kale is a type of cruciferous veggie, including cauliflower and broccoli. It is one of the most nutritious veggies with a great amount of vitamin A, vitamin K, and vitamin C. 100 grams of kale contain nearly 3 mmol of antioxidants. Nevertheless, red varieties, such as red Russian or redbor kale would provide almost twice as much, up to 4 mmol of antioxidant per 100 grams. This is mainly because they are higher in anthocyanin and other antioxidants giving them the red color. Another nutrient that can be found in kale is calcium, which plays a role in bone health and many cellular functions. [8]
