Ripe Bananas

Bananas are not common because they are cheap and tasty, but nutritious. They only include carbs either in the form of sugar and starch, which depends on the ripeness of the banana.

Unripe, green bananas contain a large amount of resistant starch, which is difficult to digest. However, during the ripening process, the starch is broken down into simpler sugar for easy digestion.

Interestingly, for unripe bananas, the content of starch is around 80 percent but declines lower than 1 percent once they are riped. More so, as the banana ripens, a type of fiber known as pectin commence breaking down. This leads to a soft banana for easy digestibility. [3]
