Eosinophilic gastroenteritis is a disease that affects a large part of the digestive tract. It is characterized by the presence of eosinophils, a form of white blood cells in many tissues around the body. They play an important part in the immune system. In those with eosinophilic gastroenteritis, eosinophils do not stay in tissues, but penetrate the digestive tract and lead to inflammation. While the small intestine and stomach are the two most commonly affected parts, symptoms may also occur in the lower digestive tract. [1]
