The sense of taste is associated with two specialized cells: gustatory and olfactory. Gustatory cells are clustered in the tongue and throat, while olfactory cells are located in the nose. When people chew or smell food, food combined with saliva will activate the sense of taste, while aroma will activate the sense of smell. Different taste buds are responsible for different responses to food. These include umami, salty, bitter, sour, and sweet.
