Carrots are one of the greatest sources of vitamin A. Studies have shown that a deficiency of this vitamin is linked to a progressive eye condition called xerophthalmia. If left treated, the disorder would lead to blindness or vision problems in low light. Also, vitamin A deficiency is a common cause of blindness in small kids. Carrots are high in zeaxanthin and lutein as well. Both antioxidants can help the body prevent age-related macular degeneration, a form of vision loss. Keep in mind that once a deficiency has already occurred, it is almost impossible to improve your vision by consuming more carrots. [1]
