Gelatin
Gelatin is a byproduct of collagen derived from animals. It is a jelly substance obtained by boiling collagen-rich parts like pig skins, bovine hides, tendons, bones, and ligaments with water. There is no chemical modification during the cooking process, which means gelatin is 100% natural and green. Therefore, it is a great ingredient to boost flavors, and using gelatin in gummy candy, marshmallows, water jelly, or dessert jelly is quite common. Gelatin has different elasticities in different statuses. Dry gelatin is brittle, while moist gelatin is rubbery.
Beyond that, gelatin provides the necessary amino acids (glycine and proline) for our body to maintain a normal function. It is also proven to be effective in promoting digestion, managing blood glucose, preventing bone loss, and improving sleep quality. [6]
